Super Spinach Casserole

Butter or margarine
1/4
Onion, chopped
2
Eggs
1/3
C
Milk
1/3
C
Parmesan cheese
1
C
Cooked rice
1-(10 oz)
box
Frozen chopped spinach, thawed & drained
Salt & Pepper to taste
In a skillet, melt butter or margarine.
Add onion. Cook 5 minutes or until soft.
In a medium bowl, combine eggs, milk and Parmesan cheese. Mix well.
Add remaining ingredients. Mix well.
Pour into a greased casserole.
Bake in a preheated 350 degree oven for 35 minutes.
Serves 6.
