A family holiday favorite contributed in the memory of my mother, Sally Fahmer.
1 1/2 | lbs | Premium Brand Saltines |
1 | lb | regular pork sausage |
1 | medium bunch celery | |
4-6 | medium size onions | |
2 | tbsp | poultry seasoning |
salt to taste | ||
1/2 | tsp | ground pepper |
water as needed |
Cut celery and onion in approximately 1/4" pieces. Place in a saucepan and add water to cover. Bring to a boil, then remove from heat. Meanwhile, crush the crackers medium fine with a rolling pin and place in a large mixing bowl. Crumble the raw pork sausage into the crackers. Add salt and pepper. Pour the celery/onion mixture over all and stir to mix. Add additional water if necessary, but do not make too moist. This recipe makes enough stuffing for a 15-18 pound turkey with an additional side dish of dressing. Stuff and truss the turkey and then roast according to any good recipe.
