Wash and peel potatoes; slice thinly. Spread about 1/3 of the slices in a buttered 1 1/2 quart casserole dish. Melt butter in saucepan; slowly blend in flour, salt and pepper. Gradually add hot milk, stirring constantly. Sprinkle potatoes with half of the onions and 1/3 of the sauce. Cover with another layer of potatoes and remaining onions. Place remaining potatoes on top, then cover with remaining sauce. Sprinkle with paprika and grated cheese (if desired). Bake uncovered at 375 degrees for one hour or until potatoes are lightly browned on top. Yield: 6 servings.
