Roasted Garlic Aoili

Egg Yolk

Olive Oil, extra virgin

Tarragon, freshly chopped

Garlic Cloves
Pinch Cayenne Pepper
1-1/2
tsp
Lemon Juice, freshly squeezed
Sea Salt, to taste
Pepper, to taste
Wrap raw cloves in foil, then place in a 350° oven for 15-20 minutes until soft. Remove and set aside.
Place egg yolk in the bottom of a bowl (stainless steel preferred). WWhisk until slightly pale yellow in color.
Slowly drizzle in olive oil
Mash the cloves of garlic and whisk into mixture. Mixture should be fairly thick.
Add tarragon, cayenne, lemon juice, salt and pepper.
Whisk to incorporate. Adjust seasonings.
Refrigerate for at least 3-4 hours.
