This recipe is a staple in Germany and a wonderful way to make potatoes. The hint of nutmeg is delicious.
1 | lb. | boiled potatoes |
1 | ounce | butter |
1 | egg | |
6-7 | tbsp. | plain flour |
salt | ||
nutmeg | ||
oil for frying | ||
1 | egg, beaten | |
Breadcrumbs for Coating |
Instructions: Steam or boil potatoes and drain. Rub the potatoes at once through a sieve and leave to cool. Cream the butter into the potatoes and gradually add the egg, flour, salt, and nutmeg. Shape the mixture into rolls about 2" long. Dip in the beaten egg and coat with the breadcrumbs. Fry at once in 4" deep hot fat until golden brown. Frying time: 2-3 minutes. If you like, you may shape the potato mixture into balls or rings. Frying time:20-30 minutes.
