This is a combination of 3 recipes that I concocted one night when I didn't have enough of the ingredients called for. I took what I had on hand and this recipe is the result of this brain child!
1 | Pkg. (10 oz.) | Frozen chopped spinach |
thawed and drained | ||
3 | Tbsps. | Butter |
2 | Tbsps. | Flour |
1 | Cup | Milk |
1/4 | Pkg. (2 oz.) | Cream cheese |
1/2 | Oz. | Feta cheese (optional) |
3 | Tbsps. | Sour cream |
1 | Tsp. | Lime or lemon juice |
1/4 | Tsp. | Dillweed |
1/4 | Cup | Onion, chopped |
3 | Drops | Tabasco |
Salt & Pepper to taste | ||
Bread Crumbs | ||
Thaw spinach and drain. Melt butter in a large saucepan and add flour, mixing well. Slowly add milk and stir well, getting all the lumps out. Add cream cheese, sour cream and feta cheese, mixing well. Add salt and pepper, tabasco and dillweed. Add spinach and onion, mix well. Place in a buttered dish and top with bread crumbs (I use the italian for extra flavor). Bake at 350 degrees for approximately 30 minutes - until heated thru and bread crumbs browned.
