Peeled and grated potatoes

Onion, chopped

Flour

Eggs, lightly beaten

Pepper to taste

Chopped chives (optional)
Squeeze liquid out of peeled, grated potatoes. Combine potatoes with onion, flour, salt, pepper and chives. Stir lightly beaten eggs into the mixture.
Heat 1/4 inch of oil in a skillet and spoon in tablespoons of the mixture to make medium sized patties. Lightly brown on both sides.
Serve with cottage cheese, sour cream, applesauce or yogurt.
