Put prepared vegetables into a large bowl. Pour olive oil over all and toss to coat. Season to taste with the seasonings. Wrap vegetables tightly in heavy duty foil and cook in a large roasting pan. Make sure to use a large piece of foil as not to crowd vegetables too much. Bake at 375degrees for 30-35 minutes.
