Curried Celery

I have received many compliments on this dish over the years

cups
diagonally sliced celery
2
tbsp
butter or margarine
1/3
cup
sliced onion
1
medium cooking apple, sliced
2
tsp
flour
1
tsp
curry powder
water
salt to taste
pepper to taste
Place celery in small saucepan and add water to barely cover. Cook until tender, then drain, reserving 1/3 cup of the liquid.
Melt the butter in a skillet, add the onion and apple and saute, stiring gently, until tender.
Stir in the flour and curry powder, heating gently.
Add celery liquid and celery, simmer, stirring gently, about 2 minutes.
Season with salt and pepper to taste.
Makes 4 servings.
