My family and friends love this recipe! This dish can be prepared ahead and warmed and it's also deelish COLD!
5-6 | Medium | Sweet potatoes peeled or |
2 18 oz. cans sweet potatoes, drained | ||
and cut into bite size pieces. | ||
1 | Can | Apple Pie Filling, (21 oz.) |
1 | Can | Whole cranberry sauce (8 oz.) |
2 | Tbsps. | Apricot preserves |
2 | Tbsps. | Orange Marmalade |
Cut fresh potatoes into bite size pieces (or canned). Cook fresh potatoes in enough boiling salted water to cover - about 15 minutes. Spread pie filling in a 8 x 8 x 2 baking dish. Arrange cooked (fresh or canned) sweet potatoes on top. In a small mixing bowl, stir together cranberry sauce, apricot preserves and orange marmalade. Spoon over sweet potatoes. Bake uncovered in a 350 oven for 20 minutes (until heated through).
