2 | tbsp | Butter |
2 | Scallions trimmed and sliced | |
2 | tbsp | Chopped green pepper |
1 | large | Tomato peeled and finely chopped |
Salt and pepper to taste |
Cut the corn kernels from the cobs. Heat 1 tablespoon of the butter and add the corn, scallions and green pepper. Cook for 3 minutes. Add the tomato, salt and pepper. Cover and cook for 5 minutes or until the corn is tender. Stir in the remaining butter and serve.
