Delicious even without pimento.
1 1/2 | Lbs. | Fresh broccoli, cut up (about 6 cups) |
1 | Can | Cream of mushroom soup |
1/4 | Cup | Mayonnaise or salad dressing |
1/2 | Cup | Sharp american cheese, shredded |
1 | Tbsp. | Chopped pimento |
1/3 | Cup | Ritz or cheese cracker crumbs |
Preheat oven to 350degrees. In a covered saucepan, cook broccoli in small amount of boiling salted water - 10 to 15 minutes, drain. Put broccoli in a 1 1/2 quart casserole. Combine soup, mayonnaise, cheese, pimento. Mix this in with the broccoli and top with crumbs. Bake for 35 minutes.
