Bushunter's Black Eyed Peas

OK, here's my trademark recipe, a big hit on New Years Day when tradition says you need to eat Black Eyed Peas for good luck in the New Year! It Works!! They are also good the other 11 months of the year.
1 | | ham bone with plenty of ham left on the bone

2 | cups | of dried Black Eyed Peas |
1 | | medium onion,chopped |
1/2 | | green pepper, chopped |
2 | | cloves garlic, minced |
2 | Tbsp | olive oil |
1 | Tbsp | oregano |
1 | Tbsp | cilantro |
1/2 | tsp | salt |
1 | 10-oz can | of tomato sauce |
1 | 12-oz can | of Rotel tomatoes/green chillies |
- First thing you need to do is find a Honey Baked Ham store in your city, buy a ham bone, (they sell them for $2.49 each and usually include about a pound of ham left on the bone!) trim the "Good " ham off the bone and set it aside.
- Place the ham bone in a large stock pot with three quarts of water and let it boil for a couple hours till the marrow in the center of the bone has melted and the bone joint has separated on it's own. At this point you'll have lots of loose ham chunks in the pot, a good time to take a fork and retrieve a couple pieces for snacking, just to sustain the cook for a little while longer!
- About the same time you start boiling the bone, you need to wash and inspect two cups of dried Black Eyed Peas and put them in a pot along with two quarts of water, bring the peas to a boil for about two minutes, remove from the heat , cover and let them soak in the hot water for one hour, drain and set aside.
- When the ham bone has separated, it's time to strain the stock into another large pot and discard the bones and boiled remains. Let the stock cool and skim the fat off the top. Add two quarts of the ham stock to the peas, bring to a gentle boil and simmer them 'til tender.
- It's now time to make the dressing for the peas. Chop a large onion and sauté it in a couple tablespoons of olive oil till the onion is transparent, now add the two minced cloves of garlic and the chopped green pepper, oregano, cilantro,salt, tomato sauce, Rotel tomatoes and the cubed ham you saved from the bone. Let it simmer for about 15 minutes to let the flavors marry.
- Drain the liquid from the peas and replace the liquid with the dressing.
- Great for freezing into individual servings.
