Everyone loves pita pockets, and this simple version is particularly flavorful.
1 | can (6 1/2 oz) | Tuna, drained |
1/3 | tbsp | Light mayonnaise |
2 | tbsp | Sweet pickle |
2 | tbsp | Relish |
2 | tbsp | Coarsely chopped peanuts |
1 | Green onion, chopped | |
Salt and pepper to taste | ||
2 | Pita breads, halved | |
16 | thin | Cucumber slices |
1/2 | C | Alfalfa sprouts |
In bowl, combine tuna, mayonnaise, relish, peanuts, onion, and salt and pepper to taste. (Can be refrigerated overnight.) Pack into pita pockets; top with cucumber and sprouts.
Makes two servings.
