1 | tbsp. | grated fresh ginger |
1 | clove | garlic, minced |
1 | tbsp. | olive oil |
3 | cups | vegetable broth |
1 | large | papaya, peeled, seeded, and chopped (about 2 cups) |
1/4 | tsp. | bottled hot pepper sauce |
1/2 | 12-oz. pkg. | soft tofu (fresh bean curd), drained and cut into small cubes |
2 | tsp. | snipped fresh cilantro |
1/4 | cup | unsweetened coconut milk |
1/4 | cup | chopped peanuts |
2 | tbsp. | chopped green onion |
Stir in tofu and cilantro.
Simmer, covered, for 5 minutes more.
Stir in the coconut milk; heat through.
Top each serving with peanuts and green onion.
Makes 3 servings (5 cups).
