For colorful variation, substitute 1/4 cup diced tomato for the green pepper. Extra zest, sprinkle egg mixture with 1 teaspoon grated Parmesan cheese.
Upgrade this recipe into a ham, egg and cheese sandwich: Add 1/2 oz. julienne-cut cooked ham and 1/2 oz. shredded Monterey Jack cheese. Sauté ham with vegetables. Add cheese along with eggs, cook until eggs are set and cheese is melted.
