1 | Boneless skinless chicken breast half (4 ounces), cubed | |
1/4 | C | Chopped onion |
1 | sm | Potato, cubed |
1 | sm | Carrot, sliced |
1 | C | Chicken broth |
1 | Garlic clove, minced | |
1/4 | tsp | Dried tarragon, crushed |
1/8 | tsp | Salt, optional |
Dash pepper | ||
2 | tsp | Chopped fresh parsley |
Coat a saucepan with nonstick cooking spray; brown chicken over medium-high heat. Add the next eight ingredients; bring to a boil. Reduce heat. Cover and simmer for 20-25 minutes or until vegetables are tender. Sprinkle with parsley.
Yield: 1 serving
