Fried Green Tomato Sandwich

Comment from contributor: Had lunch at the "Blow Fly Inn" the other
day and had a Fried Green Tomato sandwich. Never heard of that before but
tried it and it was soooooo good. I came home and put together a recipe
so I could send it to my daughter and now am going to share with you.........
(this is my recipe for Fried green tomatoes)

Green tomatoes -- cored and cut into1/4-inch slices |

All-purpose flour |

Self-rising cornmeal |

Vegetable oil |
Other ingredients for sandwich:
Bread of choice (Toasted)
Lettuce
Mozzarella
Condiments: Mayonnaise, salt, pepper
To fry tomatoes:

In large bowl, combine the egg, water, salt and pepper; mix well. Add the
tomato slices and toss to coat well.

In a shallow dish, combine the flour and cornmeal mix; mix well. Dip a
tomato slice into the flour mixture, coating completely and place on a
baking sheet. Repeat until all the slices are coated.

In a large skillet, heat the oil over high heat until hot but not smoking.
Fry the coated tomatoes a few at a time for 2 to 3 minutes per side, or
until golden brown. Drain on a paper towel-lined platter.
Keep warm.
NOTES : Allowing the first slices of tomato to sit on the baking
sheet while the rest are coated will help the breading stay on, so fry
them in the order they were coated.
To prepare Sandwiches:

After the tomatoes are fried, toast the bread, & put mayonnaise on
both sides of bread. Place several slices of the fried green tomato, add
lettuce, salt, and pepper.

Place a slice of mozzarella cheese on one side of the bread and toast under
a broiler. When cheese is melted put the sandwich together and ENJOY!
