Chicken and Dressing Soup

Tastes just like Thanksgiving dinner!
3 | C | Water or to cover |
1 | | Quartered onion |
1 | | Bay leaf |
1/4 | C | Chopped parsley |
1/4 | C | Chopped celery leaves |
1 | | Chicken breast |
- Cook chicken in water with seasonings until tender. Remove chicken, chop meat, strain and reserve liquid. (I don't strain, but am giving you as is in cookbook.)
1 | C | Diced celery |
1 | C | Diced onion |
2 | tbsp | Margarine |
3 | C | Cubed fresh white bread |
- Sauté celery and onion in margarine until soft. Do not brown. Add bread cubes and more margarine if needed. Stir until well coated. Combine with reserved broth.
1 | tsp | Sage |
1 | tsp | Pepper |
1 | tsp | Poultry seasoning |
2 | tbsp | Chicken stock base |
2 | C | Evaporated milk |
