Clam Chowder #2
From the Kitchen of: Penny Canamas
My recipe, which the family has loved for many years.
4 | | Potatoes (cubed) |
1 | med | Onion (chopped) |
4 | cans | Minced clams with juice |
2 | C | Water |
4 | C | Carnation milk |
1/2 | C | Fresh parsley (chopped) |
6 | slices | Bacon (chopped) |
1/2 | C | Parmesan cheese |
- Fry onion with bacon until onion is soft and bacon is soft (not fully cooked); add clam juice, water and potatoes. Simmer 15 minutes.
- Add clams, milk, parsley and Parmesan cheese; simmer on very low heat for about 1/2 hour (don't boil).
- Season with salt, pepper, onion and galic salt.
