Chili Tropical Fruit Salsa!

ripe mangos, diced fine
1/2
cup
pineapple, diced fine
1/2
cup
cantaloupe, diced fine
1/2
cup
honeydew, diced fine
1/8
cup
lemon, squeezed
1/8
tsp
mint
1
Chile de Arbol chile pepper
Reconstitute chiles in hot water for 20 minutes. Slice away seeds and stem and dice.
Mix all ingredients together in a bowl, let sit 10 minutes.
Serve with chips or over grilled chicken, tuna or swordfish.
Serves 6.
