Spiced Fruit Sauce for Ham

1 | 9 oz. (1 cup) | pineapple tidbits |
1 | 9 oz. (1 cup) | apricot halves |
3 | inches | stick cinnamon |
12 | whole | cloves |
2 | tbsp. | sugar |
2 | tsp. | cornstarch |
1/2 | cup | seedless raisins |
1 | tbsp. | sherry |
- Drain fruit - reserve syrup. Cut apricots in quarters. Combine syrups and spices.
- Simmer, covered 5 minutes. Remove spices.
- Combine sugar and cornstarch - stir in small amount hot syrup - return to hot mixture.
- Cook, stirring constantly until it comes to a boil and thickens. Add the 3 fruits and cook 5 minutes more. Add 1 tbsp sherry.
- Serve warm with ham.
