Not having a good salsa recipe but lots of tomatos, Ana combined several salsa recipes sent to her by friends until she came up with one that suited her taste.
1 | gallon | peeled, seeded, chopped tomatoes |
2 | quarts | chopped onions |
2 | cups | chopped green bell peppers |
6 | medium | chopped jalapeno peppers |
6 | cloves | minced garlic |
1/4 | cup | lime juice |
2 | cans | tomato paste -- (8 ounces each) |
9 | pkgs | Sweet 'n Low® sweetener |
1 | tablespoon | canning salt (*un-idionized) |
3/4 | cup | cup vinegar |
1 | bunch | fresh parsley -- finely chopped |
fresh oregano, to taste -- finely chopped |
Makes 7 pints.
