Roasted Red Pepper Sauce
From the Kitchen of: Pepper
This is a good sauce to serve over tortelllni, or other type pasta
1 | teaspoon | light olive oil

3/4 | cup | onion, chopped
|
2 | cloves | garlic, crushed
|
1/2 | cup | canned vegetable broth
|
2 | teaspoons | sugar |
2 | teaspoons | white wine vinegar |
1-1/2 | teaspoons | dried basil or
|
2 | tablespoons | fresh basil
|
12 | ounces | roasted red bell peppers, drained |
1/4 | cup | parmesan cheese, shredded |
2 | tablespoons | fresh parsley, chopped
|
- In a medium nonstick skillet heat oil over medium-high heat. Add onion and garlic to oil and saute 3 minutes or until tender.
- Place onion mixture, broth, sugar, vinegar, basil, and bell peppers in a food processor; process until smooth.
- Return sauce to skillet; cook over medium-high heat 5 minutes or until thoroughly heated. Sprinkle with cheese and parsley.
