Nutmeg Sauce

1/4 | cup | granulated sugar |
2 | tbsp | all purpose flour |
1/4 | tsp | salt |
1 1/2 | cups | milk |
1 | | egg, lightly beaten |
2 | tbsp | butter |
1/2 | tsp | vanilla |
1/4 | tsp | freshly grated nutmeg |
- In medium saucepan, mix together sugar, flour and salt; blend in milk.
- Cook over medium heat, stirring constantly, until mixture boils and is thickened and smooth.
- Stir a little of the hot sauce into beaten egg, stirring constantly; return to remaining sauce in
pan. Cook, stirring constantly for 1 minute.(over low heat)
- Remove from heat and stir in butter, vanilla, and nutmeg. Serve at once or keep hot over simmering water.
