Mango and Ginger Sauce

finely chopped ginger root

can
mango slices
salt
freshley ground pepper
Peel the onion and chop finely.
Heat the oil in a small saucepan and saute the onion and ginger for five minutes or until clear.
Drain the mangoes and puree in a blender, food processor or sieve. Add to the saucepan and bring to the boil.
Makes about one cup.
