1 red bell pepper, cut in narrow strips |
3/4 lb cooked large shrimp |
3/4 lb baby spinach, tough stems removed (11 cups packed leaves) |
1/2 cup chopped fresh mint leaves |
1/4 cup fresh lemon juice (Grate the peel before juicing the lemon.) |
2 tsp grated lemon peel |
3 Tbsp olive oil |
3/4 tsp salt |
1/4 tsp black pepper |
