Lemon Sauce

lowfat, low sugar, low sodium
1/2 | cup | Sugar |
2 | Tbsp | Cornstarch |
1-1/4 | cup | Water |
1/4 | cup | Lemon juice |
1/2 | tsp | Grated lemon rind |
- In a small heavy saucepan, combine the sugar and cornstarch and
gradually whisk in the water and lemon juice. Set over moderate heat,
cover, and bring to a boil; immediately reduce the heat to low and cook,
stirring constantly, until the sauce has thickened and is clear; about 2
to 3 minutes.
- Remove from the heat, cool, and stir in the lemon rind. Store,
tightly covered, in the refrigerator for up to 1 week.
- Makes 1-1/2 cups.
