butter or margarine

all-purpose flour

milk

mayonnaise or salad dressing

chopped dill pickle

tablespoon
chopped onion

teaspoons
snipped parsley
To make the Hot Tarter Sauce:
In a small saucepan, melt the 1 tablespoon
butter or margarine. Stir in the flour. Add the milk all at once to the flour
mixture. Cook and stir over medium heat until the mixture is thickened and
bubbly. Cook and stir for 1 minute more. Stir in the mayonnaise or salad
dressing, dill pickle, onion, and parsley. Heat the sauce through.
To Serve:
Pour the Hot Tartar Sauce over fish steaks. Or, serve the Hot Tartar Sauce on the side, and garnish with lemon slices and fresh dill, if desired.
