Hercules' Cucumber Sauce

NOTES : This sauce goes well with grilled chicken breasts, rice pilaf, sliced tomatoes and pita bread. It also pairs well with grilled pork or fish.
1 | large | cucumber (about 3/4 lb.) |
1/2 | cup | reduced-fat sour cream |
1/4 | cup | prepared hummus |
| | Salt and black pepper to taste |
- Peel the cucumber and cut it into bite-size pieces (it's not necessary to peel the cucumber if you use a hothouse or Kirby variety). Place the cucumber in a 1-quart or larger serving bowl or storage container. Stir in the sour cream and the hummus until well-combined. Season with salt and pepper to taste.
- Serve at once or refrigerate until ready to serve.
Makes about 11/4 cups.
- Each tablespoon contains approximately 15 calories (56 percent from fat), 1 gm. fat, 2 mg chole sterol, no protein, 1 gm. carbohydrates, no fiber and 10 mg. sodium.
