Minted Grapefruit and Honey Marinade
From the Kitchen of: Pepper
Good with skinless, boneless chicken breasts or turkey breast cutlets, and excellent with swordfish and shrimp.
1 | cup | fresh grapefruit juice |
3 | tbsp. | vodka, optional |
1 | tbsp. | honey |
3 | tbsp. | chopped fresh mint |
1 | tbsp. | grated grapefruit zest |
2 | tsp. | grated fresh ginger |
1 | tsp. | ground coriander seed |
1 | | jalapeņo pepper, seeded and minced |
- In a small bowl, whisk together the grapefruit juice, vodka and honey. Stir in the remaining ingredients.
- Place the poultry or fish in a shallow ceramic or glass dish, and add marinade. Turn to coat.
- Use immediately, or cover and refrigerate, turning occasionally for 1 to 2 hours.
- Makes about 1 1/4 cups.
