CHEESE SAUCE
From the Kitchen of: Pepper
1 | Tbl. | butter |
1/2 | Tbl. | flour |
| | Salt & pepper to taste |
Pinch | of | cayenne pepper |
1 | cup | milk |
1 | | egg yolk |
1 | tbl. | Parmesan cheese |
Melt the butter in a small saucepan and stir in the flour and seasonings to taste. Add the milk. Stir continuously until sauce thickens.
Remove pan from heat and stir in the egg yolk. Stir in the cheese
Yield: about 1 1/4 cups
