Bernaise Sauce

4 | | egg yolks |
1 | C | butter |
1 | Tbsp. | lemon juice |
1 | Tbsp. | Tarragon Vinegar |
1/4 | Tsp. | Salt |
1 | Tsp. | chopped parsley |
1 | Tsp. | Onion juice |
| dash | cayenne |
- Place egg yolks with 1/3 of butter in the top of double boiler.
- Keep water in bottom of boiler hot but not boiling.
- Add the remaining butter as sauce thickens, stirring constantly.
- Remove from heat and add remaining ingredients.
Serve with broiled meat.
Yield: 1 cup
