Turkey Waldorf Salad

turkey cutlets, cubed

Red delicious apples, diced

Celery, diced

Walnuts, chopped

Scallions, sliced

Plain yogurt

Mayonnaise

Apple-juice concentrate

Salt
Bring pot of water just to simmering. Add the turkey cutlets, cubed; cook 3 minutes. Drain; cool.
Combine the apples celery, chopped walnuts, in large bowl.
Add turkey, yogurt, mayonnaise, apple-juice concentrate and salt. Toss.
Serve over greens.
Makes 6 servings.
