Sunshine Salad

1 | small pkg. | Lemon Jello |
1 | cup | Boiling water |
1 | small can | Crushed pineapple |
1 | Tbsp | Vinegar |
1/2 | tsp | Salt |
1 | cup | Grated carrot |
1/3 | cup | Chopped pecans |

Dissolve gelatin in boiling water. Drain pineapple and add water to
juice to
make 1 cup of liquid. Add liquid, salt and vinegar to dissolved gelatin.
- Chill until partially set. Fold in carrots, pineapple and nuts.
- Chill until firm.
