Sour Cream Dressing

3 | Tbsp | Corn starch

1 | Tbsp | Sugar

2 | tsp | Mustard
|
2 | tsp | Salt
|
1/8 | tsp | Pepper
|
| few grains | Cayenne
|
1/2 | tsp | Paprika
|
1 1/4 | cup | Milk
|
2 | | Egg yolks
|
1/4 | cup | Vinegar
|
1/2 | cup | Mazola salad oil
|
1 | tsp | Onion juice
|
2 | tsp | Chopped parsley
|
1/2 | cup | Sour cream
|
- Mix first 7 ingredients in small amount of the milk until smooth. Add
remaining milk. Bring to a boil over low heat and boil 2 minutes,
stirring constantly. Remove from heat; gradually beat mixture into egg
yolks with rotary beater.
- Return to heat and cook 2 minutes longer,
stirring constantly.
- Remove from heat. Add vinegar; beat well.
- Gradually beat in salad oil until smooth. Cool; fold in onion juice,
parsley and sour cream.
- Makes about 2 1/2 cups.
