I created this recipe as my husband was receiving radiation treatments for cancer. He was suppose to get as much extra protein as possible, but because the radiation caused his swallowing to become very difficult we were limited to soups, shakes, and other soft foods. He hated cottage cheese but I found this way to use it and he said it was his favorite salad food.
