Ginger-Lime Dressing
From the Kitchen of:
Pepper

cup
Low fat mayonnaise
4
tsps.
Fresh or reconstituted lime juice
1-1/2
tsps.
Grated lime peel
1-1/2
tsps.
Grated fresh ginger (use 1/2 tea. of ground ginger if you don't have fresh)
3/4
cup
Plain low-fat yogurt
Combine mayonnaise, parsley, lime juice, peel and ginger in blender and blend until smooth. Transfer to bowl and stir in yogurt.
Serve over sea food salad - shrimp, crabmeat, or lobster...
