Fruit Dressing

This was passed down from my mother-in-law and is a family favorite. The dressing has a very pronounced Pineapple flavor and adds just the right touch to the fruit flavors
2/3 | cup | Sugar |
2 | Tbsp | Flour |
2 | | Eggs, beaten |
2 | Tbsp | Salad oil |
3 | Tbsp | Lemon juice |
4 | Tbsp | Orange juice |
1 | cup | Pineapple juice |
1/2 | pint | Heavy cream, whipped |
- Combine Sugar and Flour in double boiler, add remaining ingredients except cream cooking until thick stirring constantly.
Cool.
- Fold in whipped cream.
- NOTATION: Exceptional topping for a compote of mixed fresh fruit or display fruit separately on a large platter with fruit dressing placed in the center.
- Use fresh Pineapple,Golden Delicious Apples,
Red & White Seedless Grapes, Pears, Cantalope & Honeydew melons, fresh Cherries pitted & halved and Watermelon. Best mix is with
your imagination.
- Goes well with any buffet, makes for a light
dessert anytime and goes well in the summer at picnics.
