I know! Hot avocado! Yuch!! Try it, it is good!! These make a nice substitute for a salad or are good as an appetizer, but filling.
2 | large | avocados |
3 | tbsp | lemon juice |
1 | tap | salt |
4 | tbsp | butter |
6 | tbsp | flour |
1/8 | tsp | pepper |
1 1/2 | C | milk |
1/2 | C | diced celery, cooked |
1 | C | boiled shrimp or crab |
2/3 | C | grated sharp cheddar cheese |
Cut avocados in half lengthwise and peel. Sprinkle with lemon juice and salt. Melt butter, blend in flour; add milk, a little at a time. Stir until thickened and smooth. Add remaining salt and pepper. Add celery and shrimp.
Fill avocados with shrimp mixture and cover with grated cheese.
Place in baking dish, pour water to depth of 1/2 inch and bake in 350 degree oven for 15 minutes.
