2 | Egg yolks, slightly Beaten | |
1/2 | Cup | Orange juice |
2 | Tbsp. | Lemon Juice |
1 | Tbsp. | Orange rind, grated |
1 | Pie Shell, baked | |
Whipped topping or sweetened whipped cream |
Combine sugar, flour, and salt in the top of a double boiler over simmering water; stir in 1-1/4 cups water. Stir until smooth. Remove from double boiler and stir over direct medium heat for 5 minutes. Add the yolks and place over simmering water again and cook 5 minutes longer, stirring constantly. Remove from heat and add the fruit juices and rind. Chill thoroughly and pour into baked pie shell. Cover with sweetened whipped cream or whipped topping. Serves 6.
