Sweet Tater Pie

Cooked and mashed sweet potatoes

Softened butter

Eggs, separated

Milk or half and half

Salt

Ground ginger

Cinnamon

Nutmeg

cup
Sugar
Combine sweet potatoes, butter, egg yolks, 1 cup sugar, salt, and spices. Mix well.
Add milk or cream, blending well. Beat egg whites until foamy.
Gradually add 1/4 cup sugar, beating until stiff. Fold egg whites into potato mixture.
Pour into unbaked pie shell (9 inch) Bake at 400 degrees for 10 minutes, then at 350 for 30 minutes,or until center is set.
When cooled, serve with real whipped cream.
