Pineapple Tarts

Crushed pineapple, drained

Maraschino cherries, quartered

Grated lemon rind

Plain Pastry

Butter
Combine first 6 ingredients. Cut pastry into 8 5-inch squares.
Arrange pastry squares in muffin pans and place 3 heaping tablespoons pineapple mixture into each.
Dot with butter. Draw corners of pastry over filling.
Bake in hot oven 425 degees F for 20 to 25 minutes.
Makes 8 tarts.
