I've used this recipe for years and saw it recently in the Joy of Cooking book. I have no idea where THEY got it. but it was passed on to me from my mother and hers before her.
1 | 9-inch | Single Crust Pie Shell |
3 | Eggs | |
1 | cup | Sugar |
1/2 | tsp | Salt |
1/3 | cup | Melted Butter |
1 | cup | Light Karo Corn Syrup |
1 | cup | Pecans, finely chopped and fresh (store bought are a year old before they make the shelves) |
1 | tsp | Vanilla |
Preheat oven to 450 degrees. Line a pan with pie dough and bake it only partial, about 5-7 minutes. Let it cool.
Combine eggs, sugar, salt, melted butter and Karo syrup and beat thoroughly.. Stir in the pecans and vanilla. Fill the shell. Bake for 40 to 50 minutes at 375 degress or until knife inserted int he filling comes out clean. Serve with vanilla ice cream.
