1 | tbsp. | grated orange rind |
Mix in a saucepan the sugar, cornstarch. Gradually stir in orange juice. Cook over moderate heat, stirring constantly, until mixture thickens and boils. Boil 1 minute. Slowly stir half the hot mixture into the egg yolks. Then beat into hot mixture in saucepan. Boil 1 minute longer, stirring constantly. Remove from heat. Continue stirring until smooth.
Blend in the butter, lemon juice and grated orange rind.
pour into baked pie shell. Cover with meringue. Bake in a 400°F oven until a delicate brown or about 8 to 10 minutes.
Serve as soon as possible.
