I have been using this recipe for a long time both as a coconut pie and as an egg pie. It works equally well either way.
4 | eggs, well beaten | |
1¾ | c. | sugar |
½ | c. | self-rising flour |
½ | stick | butter or margarine |
1 | tsp. | vanilla |
2 | c. | milk |
1 | can | flaked coconut |
Sift flour and sugar together. Add to eggs. Melt and add 1/2 stick butter or margarine. Add vanilla and milk (1 cup at a time). Beat well after each addition. Add coconut and pour into pans. Bake at 325°F until firm.
Makes 2 - 9" pies
