Italian Cheese Pie

3 | lb. | ricotta cheese |
1 | c. | sugar |
3 | | eggs |
6 | oz. | chocolate chips |
1 | tsp. | vanilla |
1 | c. | graham cracker crumbs |
1 | tbsp. | butter |
- Mix eggs and cheese by hand until creamy. There
will be lumps.
- Add sugar gradually. Add vanilla.
- Generously grease a springform pan with the
butter. Dust with graham cracker crumbs to form a crust.
- Pour half of batter into crust. Sprinkle with chocolate chips and pour rest of
batter over the chips.
- Bake at 300° for 1 hour. Refrigerate at least 24 hours before serving.
NOTE: Chocolate chips may be omitted and another filling or topping such as toasted almonds or fruit used instead.
