This was a favorite recipe of my mothers. It is very sweet. A little slice is all you need
25 | graham crackers, crushed | |
½ | cup | butter |
2 | tbsp. | sugar |
FILLING:
1/3 | cup | flour |
¾ | cup | sugar |
1 | tsp. | salt |
2 | cups | crushed pineapple with juice |
1 | tbsp. | butter |
2 | tbsp. | lemon juice |
Put 2/3 cracker mix in pie pan [rest is for top crust]
Mix sugar, flour, salt add to pineapple
Cook over Hot water in double boiler until thick. Add butter and lemon juice. Cool. Put in pie crust and top with remaining crumbs.
Bake in 350 degree oven, watch closely you are only browning the top.
