Frozen Eclairs

1/4 | cup | Butter |
1/2 | cup | Water, boiling |
1/2 | cup | Bread flour |
2 | | Eggs, unbeaten |
| | Vanilla ice cream |
| | Chocolate or hot fudge sauce |
| | Whipped cream |

- Add butter to water, heat until butter melts, add flour all at once and stir very hard until it forms a ball in the center of the pan.
- Remove from fire, add eggs one at a time, beating after the addition of each egg.
- Shape 8 eclairs with a pastry bag tube. They should be about 1 inch wide and 4 inches long.
- Bake 30 minutes in 375º oven.
- Split and store in freezer.
- To serve fill with ice cream, top with sauce and whipped cream.
- Makes 8 portions.
