2 | sq | Semi-sweet chocolate, melted |
2 | Eggs. lightly beaten | |
1 | tsp | Vanilla |
1 | tsp | Mint extract |
1 | Graham cracker crust | |
1/2 | pt | Heavy cream |
Cream butter and sugar; add melted and cooled chocolate. Add beaten eggs and continue beating until fluffy. Add vanilla and mint extract. Pour into graham cracker crust. Beat heavy cream until whipped and sweeten to taste (a little bit of the mint extract added to cream is good). Top the chocolate mixture with the cream. Refrigerate overnight. Sprinkle with grated chocolate, if desired. Serves 6 - 8.
